University of Montana opens restaurant at golf course
UM Dining and the University of Montana Golf Course have teamed up to bring new dining options to South Missoula. On Monday, the Iron Griz will open its doors.
“It’s the first restaurant that UM dining has got to offer. The students are learning firsthand how to do table service, work directly in a restaurant, [and] service standards. We have students that are going to be working in the kitchen…They’re going to be getting culinary training at the same time,” said Kate Slack, UM Dining Assistant Director for Retail Operations.
UM staff members are billing the restaurant as an American bistro, and say the menu will feature sustainable seafood and local meat, among other options.
The team will include the main chef, a full-time manager, and roughly fifteen students. For the first few weeks, the bistro will be open from 11:00 am to 9:00 pm, Monday through Friday, and will switch to seven days a week on April 4.
